ASIAN GREENS: RED CHOY SUM
(BRASSICA CHINENSIS VAR. PARACHINENSIS)
A gorgeous Asian green with red/purple stems, green leaves, and yellow flowers. This flowering cabbage is the more colourful variety of choy sum, aka “flowering Pak Choy” which is one of the most popular and widely used of all the Chinese greens.
It has a broad range of culinary applications; it can be harvested as a baby leaf for a beautiful addition to salads or harvested before flowering to be enjoyed blanched or added to your favourite soups or stir-fries!
