TOMATILLO: PURPLE

(PHYSALIS IXOCARPA)

A staple of Mexican cuisine, the tomatillo grows encompassed by a paper husk known as a “calyx”. You will know the fruit is ready to be harvested when the calyx hardens and begins to split. This “purple” tomatillo has a slightly sweeter flavour than it’s tart cousin the Verde Puebla. It can be enjoyed raw, in stews, salsas, sauces and even curries.

Rich, well-drained soil.

GROWING TIPS

Raise in seedling trays 6mm deep and keep moist.

When robust enough transplant.

Plant 1 metre apart.

Their growth habit is similar to that of a bush tomato.

Fruit keeps for 2-4 weeks.
